I know what you're thinking... watermelon and salad.... together?!?!
The first time I tried watermelon salad my younger sister made it for me.... I was super skeptical. Not only did I question her cooking abilities in general, but watermelon in salad just sounded plain weird.
BUT... if you like watermelon then trust me and try this recipe. It's great to have as a side dish on those hot summer BBQ days. I also like to enjoy it on its own as a snack.
4 cups of watermelon, cut into cubes
1 cup of cubed feta cheese
handful of fresh mint, chopped
2 tbsp olive oil
juice from half a lime
himalayan salt and black pepper, to taste
Cube the watermelon into bite sized pieces and place in a salad bowl. Chop the feta cheese and mint and add to the watermelon. Mix together the olive oil, lime juice, s+p in a bowl and then pour over the watermelon. Mix together and serve immediately or store in the fridge (all the flavours mix together well this way).
Here are some other things that can be added to this salad:
- black olives
- red onion
- honey in the dressing
